Scalloped Corn Casserole

1 can drained sweet corn
1 can of creamed corn
1 brick of cream cheese
1 stick of butter
1 box of Jiffy corn muffin mix
1 egg
salt and pepper to taste

Mix all of the above ingredients in a casserole dish and bake at 350 degrees for 45 min to 1 hour until golden brown. Serves approx 8. Enjoy!

Fresh Green Salad

1/4 c sliced almonds
1 tbs & 1 tsp sugar
1/4 head torn lettuce
1/4 bunch torn romaine
2 med stalks chopped celery
1 can drained mandarin oranges

Dressing:

1/4 c vegetable oil
2 tbs sugar
2 tbs vinegar
1 tbs snipped parsley
1/2 tsp salt
dash pepper

Shake altogether, cover, and refrigerate

Good Ole Southern Fudge

1/2 cup butter (1 stick)
1 box 10x powdered sugar
1/2 cup cocoa
1/4 cup milk
1 tsp vanilla
1/2 cup chopped pecans


In a large glass bowl, melt butter in microwave (put paper towel over bowl so it won't splatter) Sift together powdered sugar and cocoa and add to butter. I sift it right into the butter bowl! Add milk and vanilla, mixing well with an electric mixer, then heat in the microwave on high for 3 minutes. Stir in pecans if desired. Pour into greased 8x8 pan and allow to set.

 Pumpkin Pie Squares

1 1/2 cup gingersnap crumbs, plus some extra for garnish
6 tablespoons butter, melted
1/4 cup plus 2 tablespoons of sugar divided
2 eggs
2 1/2 teaspoons vanilla, divided
1 package 8 ounces plus 1 package of 3 ounces cream cheese softened and divided
1 1/4 cups solid-pack pumpkin
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup sour cream


1. Preheat oven to 325 F. light grease 13 x 9 inch baking pan

2. Combine gingersnap crumbs and butter in small bowl and mix until crumbly. Press into bottom of your prepared baking pan then bake for 10 minutes.
3. Meanwhile, place 1/4 c. sugar, eggs and 1 1/2 teas. vanilla in food processor or blender; process for about 1 min or until smooth. Add cream cheese and pumpkin and process again until smooth. Stir in your spices. Pour your mixture evenly over hot crust then bake 40 minutes.
4. Meanwhile, for your topping, whisk sour cream and remaining 2 tablespoons sugar and 1 teaspoon vanilla in small bowl until blended.
Remove pan from oven and pour mixture evenly over top of cheesecake.
Bake 5 minutes.Turn off oven; open the door halfway and let cool in oven. When cool, refrigerate for 2 hours and then sprinkle gingersnap crumbs over top and cut into 1" squares and serve. Makes 35 squares

Easy Cleaning for Oven Grills

Here's a handy tip to make your life easier!

Supplies needed:
2- dark large size garbage bags
2-large size containers of Clear Ammonia

Place 1 oven grill in one garbage bag. Fill bag with one container of amonia and tie bag to close. Repeat with other bag. Lay each bag flat out in the hot sun for a couple of hours. Remove grills from bags. Be very careful not to breath in ammonia fumes. Just a light scrubbing with a rescue pad and your grills are spotless.

Also great for barbecue grills!

WHITE PIZZA DIP

1 envelope Lipton Recipe Secrets Savory Herb with Garlic Soup Mix
1 container (16oz) Sour Cream
1 cup (8oz) Ricotta Cheese
1 cup Shredded Mozzarella Cheese (4oz)
1/4 cup chopped Pepperoni (optional)
1 loaf Italian or French Bread sliced into small strips

Preheat oven to 350. In shallow 1-quart casserole, combine Soup Mix, Sour Cream, Ricotta Cheese, 3/4 cup Mozzarella Cheese and Pepperoni.
Sprinkle with remaining 1/4 cup Mozzarella Cheese.
Bake uncovered 30 minutes or until heated through. Serve with bread.  (makes 3 cups)
